Ingredients
  

  • 2 ripe bananas
  • 2 large eggs
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1 tsp baking powder
  • ½ tsp cinnamon (optional)
  • ¼ tsp salt
  • ¼ cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • Butter or oil for cooking
  • Optional toppings: maple syrup fresh berries, yogurt, nuts, chocolate chips

Method
 

  1. Mash the Bananas: In a mixing bowl, mash the bananas with a fork until mostly smooth. A few small lumps are fine.
  2. Mix Wet Ingredients: Add eggs, milk, and vanilla extract to the mashed bananas. Whisk until combined.
  3. Combine Dry Ingredients: In a separate bowl, mix flour, baking powder, cinnamon, and salt.
  4. Combine Wet + Dry: Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined. Do not overmix to keep pancakes fluffy.
  5. Cook the Pancakes:
    Heat a non-stick skillet over medium heat. Lightly grease with butter or oil. Pour ¼ cup batter per pancake. Cook 2–3 minutes until bubbles appear on the surface, then flip and cook 2 more minutes until golden.
  6. Serve stacked pancakes, add toppings of your choice, and serve immediately.

Notes

  • Use ripe bananas for natural sweetness.
  • Overmixing can make pancakes dense.
  • Keep pancakes warm in the oven if cooking in batches.
  • Freeze leftover pancakes for quick breakfasts.
