Ingredients
  

  • 1 ripe banana
  • 2 large eggs
  • ¼ tbsp baking powder

Method
 

  1. Mash the banana in a bowl until mostly smooth.
  2. Add eggs and baking powder; whisk until combined.
  3. Heat a non-stick skillet over medium heat.
  4. Pour about 2 tablespoons of batter per pancake into the skillet.
  5. Cook for 1–2 minutes per side until golden brown.

Notes

Use a ripe banana with brown spots for the best flavor.
